Quinoa Power Bowl Recipe

Ingredients:

  • For the Bowl:
    • 1 cup cooked quinoa
    • ½ cup roasted chickpeas
    • ½ avocado, diced
    • 1 cup mixed greens
    • 1 small cucumber, sliced
    • 1 medium carrot, shredded
    • ¼ cup cherry tomatoes, halved
    • ¼ cup crumbled feta cheese
  • For the Dressing:
    • 2 tbsp tahini
    • 1 tbsp lemon juice
    • 1 tbsp olive oil
    • 1 tsp maple syrup or honey
    • Salt and pepper to taste

Instructions:

  1. Prepare the Dressing:

    • In a small bowl, whisk together tahini, lemon juice, olive oil, and maple syrup/honey.
    • Add salt and pepper to taste.
  2. Assemble the Bowl:

    • In a serving bowl, layer the quinoa, chickpeas, mixed greens, cucumber, carrot, avocado, and cherry tomatoes.
    • Drizzle with the dressing and top with crumbled feta cheese.
    • Toss gently to combine.
  3. Enjoy!
