May 23, 2024 Exercise Right - Day 4 Fuel Your Fitness Quinoa Power Bowl Recipe Ingredients: For the Bowl: 1 cup cooked quinoa ½ cup roasted chickpeas ½ avocado, diced 1 cup mixed greens 1 small cucumber, sliced 1 medium carrot, shredded ¼ cup cherry tomatoes, halved ¼ cup crumbled feta cheese For the Dressing: 2 tbsp tahini 1 tbsp lemon juice 1 tbsp olive oil 1 tsp maple syrup or honey Salt and pepper to taste Instructions: Prepare the Dressing: In a small bowl, whisk together tahini, lemon juice, olive oil, and maple syrup/honey. Add salt and pepper to taste. Assemble the Bowl: In a serving bowl, layer the quinoa, chickpeas, mixed greens, cucumber, carrot, avocado, and cherry tomatoes. Drizzle with the dressing and top with crumbled feta cheese. Toss gently to combine. Enjoy!
